1000 Small Dishes x OnePan: Buttery Red Wine Sauce

A really good red wine gravy makes the whole Christmas dinner complete. In the OnePan 26 Tractor Pan the sauce reduces quickly and evenly thanks to the wide bottom and high sides that provide control and depth of flavor.

The gravy is perfect for ribs and parmesan mashed potatoes.

Ingredients

1 shallot
1 tbsp tomato paste
2 tsp sugar
4 to 5 dl red wine
1 to 2 tbsp balsamic vinegar
2 tbsp veal stock
1 tbsp chicken stock or bouillon powder
Splash of Japanese soy sauce
1 tsp coarse strong mustard
1 tsp sweet strong mustard
Dried thyme
Splash of water
3 tbsp butter
Salt and pepper

Here's how you do it

  1. Sauté finely chopped shallots in the Traktör pan until soft.
  2. Add sugar and tomato paste and let caramelize.
  3. Pour in wine, balsamic, stock, mustard, soy sauce, thyme, and water.
  4. Let reduce until about half remains.
  5. Whisk in butter and season with salt and pepper.
