1000 Small Dishes x OnePan: Buttery Red Wine Sauce

A truly good red wine gravy makes the whole Christmas dinner complete. In the OnePan 26 Tractor Pan the sauce reduces quickly and evenly thanks to the wide bottom and high sides that provide control and depth of flavour.

The gravy is perfect for spare ribs and parmesan mash.

Ingredients

1 shallot
1 tbsp tomato paste
2 tsp sugar
4 to 5 dl red wine
1 to 2 tbsp balsamic vinegar
2 tbsp veal stock
1 tbsp chicken stock or bouillon powder
Splash of Japanese soy sauce
1 tsp coarse strong mustard
1 tsp sweet strong mustard
Dried thyme
Splash of water
3 tbsp butter
Salt and pepper

How to do it

  1. Sauté finely chopped shallots in the Tractor Pan till soft.
  2. Add sugar and tomato paste and let caramelize.
  3. Pour in wine, balsamic vinegar, stock, mustard, soy sauce, thyme, and water.
  4. Let reduce until about half remains.
  5. Whisk in butter and season with salt and pepper.
