Swedish potato pancake (råraka) with onion roe



Treat yourself to a traditional Swedish dish with this recipe for råraka, a crispy potato pancake. It's topped with rich onion roe, smetana, fresh dill and red onion. Perfect as an elegant appetiser or a gourmet snack.

Ingredients:


•Firm potatoes
• Red onion
• butter
• Moulded roe
• Sour cream (smetana)
• Fresh dill or chives
• Lemon
• Salt & Pepper

Here's how:


1) Set the oven to 210 degrees Celsius hot air. 

2) Peel the potatoes and grate them on the coarse side of a grater. 

3) Soak in cold water for about 30 minutes, drain well in a colander. Squeeze out any excess water.

4) Spoon the mashed potatoes thinly onto the OneForm, flatten it, sprinkle with salt and place a slice of butter on top.

5) Place the OneForm in the oven. After 10 minutes, turn them over so that they get burnt on both sides. Wait for another 3-4 minutes. Bake until cooked through, crispy and beautifully golden brown. 

6) Finely chop the red onion and dill (or chives).

7) Top each raw rocket with a spoonful of onion roe. Place a dollop of sour cream (smetana) on top. Sprinkle freshly chopped dill/chives over the raw rocket and garnish with red onion. 

8) Serve the raw shrimp while it's hot and crispy with lemon on the side. A savoury meal!
