Swedish potato pancake (råraka) with vendace roe


Treat yourself to a traditional Swedish dish with this recipe for råraka, a crispy potato pancake. It is topped with rich löjrom, smetana, fresh dill, and red onion. Perfect as an elegant appetizer or a gourmet snack.

Ingredients:


  • Firm potatoes
  • Red onion
  • Butter
  • Löjrom (vendace roe)
  • Sour cream (smetana)
  • Fresh dill or chives
  • Lemon
  • Salt & Pepper

Here's how to do it:


  1. Preheat the oven to 210 degrees Celsius with fan. 
  2. Peel the potatoes and grate them on the coarse side of a grater. 
  3. Soak in cold water for about 30 minutes, then drain thoroughly in a colander. Feel free to press out excess water.
  4. Spoon the potato batter thinly onto the OneForm, flatten it, sprinkle with salt, and place a slice of butter on top.
  5. Place the OneForm in the oven. Turn them after 10 minutes so they get browned on both sides. Wait another 3-4 minutes. Fry until they are cooked through, crispy, and beautifully golden brown. 
  6. Finely chop red onion and dill (or chives).
  7. Top each potato pancake with a spoonful of vendace roe. Add a dollop of sour cream (smetana) on top. Sprinkle freshly chopped dill/chives over the potato pancake and garnish with red onion. 
  8. Serve the potato pancake while it is warm and crispy with lemon on the side. Enjoy your meal!
