Swedish potato pancake (råraka) with vendace roe


Treat yourself to a traditional Swedish dish with this recipe for råraka, a crispy potato pancake. It is topped with rich vendace roe, sour cream, fresh dill, and red onion. Perfect as an elegant starter or a gourmet snack.

Ingredients:


  • Firm potatoes
  • Red onion
  • Butter
  • Bleak roe
  • Sour cream (smetana)
  • Fresh dill or chives
  • Lemon
  • Salt & Pepper

Here is how you do it:


  1. Set the oven to 210 degrees Celsius with fan.
  2. Peel the potatoes and grate them on the coarse side of a grater.
  3. Soak in cold water for about 30 minutes, then drain well in a colander. Press out any excess water if possible.
  4. Spoon the potato mixture thinly onto OneForm, flatten it, sprinkle with salt, and place a slice of butter on top.
  5. Put OneForm in the oven. Turn them after 10 minutes so they brown on both sides. Wait another 3-4 minutes. Fry until fully cooked, crisp, and beautifully golden brown.
  6. Finely chop red onion and dill (or chives).
  7. Top each potato pancake with a spoonful of vendace roe. Place a dollop of sour cream (smetana) on top. Sprinkle freshly chopped dill/chives over the pancake and garnish with red onion.
  8. Serve the potato pancake while it is warm and crisp with lemon on the side. Enjoy your meal!
