Crispy summer pizza with goat cheese, asparagus, and honey

The ultimate summer pie (no pie oven needed!) - crisp crust with goat cheese, asparagus, and honey. Try the summer pie everyone will long for in 2025 - perfectly crisp and golden, just like from a real pie oven. Topped with creamy goat cheese, toasted pine nuts, butter-fried asparagus, and a drizzle of honey. Ready in minutes - and you will surely crave more.

Ingredients

Pizza dough - make your own if you have time, but we highly recommend Pop Bakery's Pizza Dough Napoli (absolutely amazing!)
Smetana (eller crème fraîche)
Chèvre
Flint salt
Pine nuts
Tomatoes (cut into pieces)
Red onion (rather thinly sliced)
Fresh dill & basil
Asparagus
butter
Liquid honey (or truffle honey if you're feeling fancy)

How to do it

  1. Preheat the oven to the highest heat, 250-270°C, using both top and bottom heat.

  2. Toast the pine nuts in a dry pan until they are golden. Set aside.

  3. Fry the asparagus in browned butter – let the butter melt and bubble until it is golden and nutty before adding the asparagus. Set aside.

  4. Take your OneSheet oven tray – no oil, no baking paper.

  5. Place the dough directly on the tray. Stretch it out slightly.

  6. Spread sour cream over the dough, add the goat cheese, and sprinkle with flaked salt.

  7. Place the OneSheet directly on the oven floor for 3 minutes – this is the secret to a crisp base.

  8. Move the tray to the upper part of the oven until it is golden and starts to form small airy bubbles.

  9. Top with fresh tomatoes, red onion, butter-fried asparagus, herbs, toasted pine nuts, and drizzle with honey.

  10. Ready in less than 10 minutes. And yes – it’s gone in five.
