
Pinza with chanterelles
This is a delicious variation of Pinza, a traditional Italian thin crust pizza, with flavoursome red onion, chanterelle mushrooms and fresh dill. Bon appetit!

Ingredients:
• 1 ready-made pizza dough (or make your own)
• 1 red onion
• 150 g fresh chanterelle mushrooms, cleaned and sliced
• A handful of fresh dill, chopped
• 1 tablespoon of olive oil
• 100 g cream
• 100 g grated mozzarella cheese
• Salt & black pepper to taste

Here's how:
1) Preheat the oven to 220°C (430°F).
2) Roll out the pizza dough on a OneSheet or a OneTray to the desired thickness and shape. You don't need to preheat your OnePan trays.
3) Spread the batter evenly over the pizza dough.
4) Sprinkle the grated mozzarella cheese over the smetana.
5) Heat the olive oil in a frying pan over medium heat. Add the red onion and chanterelles. Sauté them until they are soft and the mushrooms have gained some colour.
6) Spread the sautéed red onion and chanterelles evenly over the pizza. Season with salt and black pepper to taste.

8) Take your Pinza out of the oven, sprinkle with the fresh dill and serve immediately.
