Tomato, mozzarella & basil-filled flatbreads

These delicious stuffed flatbreads are perfect for a quick snack, a light lunch, or as part of a Mediterranean-inspired spread. Easy to make and packed with flavor, they will become your new favorite recipe!

Ingredients

Dough for flatbread:
200 g all-purpose flour
1 tbsp baking powder
A pinch of salt
170 g Greek yoghurt

Filling:
100 g sun-dried tomatoes, finely chopped
50 g fresh basil, chopped
50 g cream cheese
50 g riven mozzarella
50 g crumbled feta cheese
A pinch of salt

Here's how you do it

  1. Prepare the dough: Mix flour, baking powder, salt, and Greek yogurt in a mixing bowl. Knead until you have a smooth and soft dough. Divide the dough into 8 equal pieces and roll each piece into a ball. Cover with a clean towel while you prepare the filling.

  2. Make the filling: Mix chopped sun-dried tomatoes, basil, cream cheese, mozzarella, feta cheese, and a pinch of salt in another bowl until everything is well combined.

  3. Assemble the flatbreads:
    - Take a dough ball and flatten it slightly.
    - Place a spoonful of the filling mixture in the center.
    - Pinch the edges of the dough together and bring them to the center to seal the filling.
    - Gently flatten the ball with your hands or a rolling pin to form a flatbread. Repeat with the remaining dough balls.

  4. Fry the flatbreads: Heat a non-stick frying pan over medium heat. Fry each flatbread for 2-3 minutes on each side, until golden and crispy.

  5. Serve: Enjoy these flatbreads warm for the best flavor! They are perfect as they are or with a yogurt dip or salad on the side.
