BBQ Chicken Quesadillas

Ingredients:
• 1-2 chicken breasts
• Salt, pepper, paprika powder
• 3 tsp BBQ sauce
• Tortillas made of flour
• 1 red onion, sliced
• 1 clove of garlic, chopped
• Shredded cheese
Here's how you do it:
1) Heat a large frying pan over medium heat. Season the chicken with salt, pepper and paprika powder.
2) Cook the chicken for 15-18 minutes, turning halfway through.
3) When the chicken is ready, take it out of the pan and shred it.
4) Add the onion and garlic to the same pan and cook until the onion softens. Add some tomato paste, paprika powder and water if necessary for extra flavour.
5) Return the shredded chicken to the pan, add the BBQ sauce and stir to combine. Set aside.
6) Place a tortilla in the same pan and sprinkle cheddar cheese on one half.
7) Place the BBQ chicken mixture on top of the cheese, then sprinkle more cheese over the chicken.
8) Fold the tortilla in half and cook for 6 minutes, turning halfway through, until golden brown and crispy.
9) Serve with extra BBQ sauce and garnish with fresh parsley. Enjoy your quick and delicious BBQ Chicken Quesadillas!
