Creamy Parmesan chicken with juicy chicken in a cream sauce, served with oven-roasted potatoes with a nice sear. The potatoes are roasted directly in the oven while the chicken is browned and allowed to simmer in the same pan, which provides even heat and makes cooking easy. An easy-to-make and popular dinner dish that is perfect for both weekdays and weekends.

Ingredients

Rostad potatis
900 g delikatesspotatis
Olivolja
Flingsalt
Svartpeppar

Parmesankyckling
4 kycklingbröstfiléer
1 msk olivolja
2 msk smör
1 gul lök, finhackad
2 vitlöksklyftor, finhackade
Färsk timjan, hackad
4 dl matlagningsgrädde
1,5 msk kycklingfond
0,5 dl riven parmesan

Till servering
Kokt eller ångad broccolini

How to do it

Preheat the oven to 230 degrees. Cut the potatoes and place them in the OneRoast. Drizzle with olive oil, salt, and pepper. Roast the potatoes in the oven for 15-20 minutes until golden and crispy. The baking tray provides high and even heat from below, giving the potatoes a nice roasted surface in the oven.
Heat the OnePan 28 over medium heat. Add olive oil and butter and brown the chicken until golden on both sides. Remove the chicken and set aside.
Lower the heat slightly and sauté the onion and garlic in the same pan until soft and glossy.
Add thyme, cream, and chicken stock and let the sauce simmer until it reaches a creamy consistency.
Stir in the Parmesan, return the chicken to the pan, and cover with the lid. Let it simmer on low heat until the chicken is cooked through and juicy, while the heat distributes evenly and the sauce maintains its smooth texture.
Serve the Parmesan chicken with the roasted potatoes and broccolini.
