Caramelized peaches with vanilla ice cream & homemade toffee sauce

Are you looking for the ultimate summer dessert that is easy to make but feels like a treat from a fine dining restaurant? Meet your new favorite: caramelized peaches with rosemary, creamy vanilla ice cream, and homemade toffee sauce - all made with the help of your OnePan.

Ingredients

For the peaches
4 ripe peaches or nectarines, halved
1.5 dl caster sugar
3 tbsp fresh rosemary, finely chopped
Flaky sea salt
Butter (for frying)

For the caramel sauce
3 dl whipped cream
1.5 dl granulated sugar
50 g butter
0.5 dl light syrup
1 vanilla pod (or 1 tsp vanilla extract)
Flaky sea salt

For serving
Vanilla ice cream

How to do it

  1. Preheat the oven to 200°C.

  2. Mix brown sugar, chopped rosemary, and a pinch of flaked salt.

  3. Press the sugar mixture onto the cut sides of the peach halves.

  4. In your OnePan frying pan 28 cm, melt butter and fry the peaches cut side down for 5 minutes until golden.

  5. Place the same pan directly in the oven and roast for 10 minutes. Turn the peaches and roast for another minute.

  6. In your ONEPan sauté pan 26 cm, mix all the ingredients for the caramel sauce. Bring to a boil and then let simmer for 15 minutes. Let cool slightly.

  7. Serve the warm peaches with scoops of vanilla ice cream and a generous drizzle of toffee sauce.
