Perhaps the Most Beautiful Pie of Spring? | Tarte Tatin with Carrots, Honey & Thyme

Sweet, caramelized, and with a perfect golden surface. This tarte tatin is one of those dishes that looks complicated but actually just works.

It all starts in the OnePan 24 where honey, butter, and vinegar are cooked down into a glossy caramel. The carrots are placed tightly, absorbing the flavors and topped with puff pastry before everything goes into the oven. The result? A pie that is crispy, soft, sweet, and a little salty all at once.

Ingredients

• 6–10 morötter
• Olivolja
• Flingsalt
• 3 msk honung
• 1 msk äppelcidervinäger
• 3 msk smör
• Färsk timjan
• 1 ark smördeg (ca 280 g)

How to do it

  1. Preheat the oven to 220°C. Peel the carrots and cut into sticks.
  2. Place on the OneSheet baking tray, drizzle with olive oil, salt, and roast for about 15 minutes until soft.
  3. Heat your OnePan 24. Add honey and vinegar, let reduce to a syrup (5–10 min).
  4. Add butter and let it melt together.
  5. Add thyme and place the carrots close together in the pan. Salt and pepper.
  6. Cover with puff pastry, fold in the edges, and prick lightly.
  7. Bake in the oven for about 15 minutes until golden.
  8. Let cool slightly, turn upside down onto a plate, and serve.
