Perhaps spring’s most beautiful tart? | Carrot, Honey & Thyme Tarte Tatin

Sweet, caramelized, and with a perfectly golden surface. This tarte tatin is the kind of dish that looks advanced, but actually just works.

It all starts in OnePan 24 where honey, butter, and vinegar are reduced to a glossy caramel. The carrots are arranged snugly, soak up the flavors, and are topped with puff pastry before everything goes into the oven. The result? A pie that is crisp, soft, sweet, and slightly salty all at once.

Ingredients

• 6–10 carrots
• Olive oil
• Flaky sea salt
• 3 tbsp honey
• 1 tbsp apple cider vinegar
• 3 tbsp butter
• Fresh thyme
• 1 sheet puff pastry (approx. 280 g)

Here's how you do it

  1. SPreheat the oven to 220°C. Peel the carrots and cut them into sticks.
  2. Place them on the OneSheet baking tray, drizzle with olive oil, season with salt, and roast for about 15 minutes until tender.
  3. Heat your OnePan 24. Add the honey and vinegar, and let reduce to a syrup (5–10 min).
  4. Add the butter and let it melt together.
  5. Add the thyme and arrange the carrots tightly in the pan. Season with salt and pepper.
  6. Cover with the puff pastry, fold in the edges, and prick lightly.
  7. Bake in the oven for about 15 minutes until golden.
  8. Let cool slightly, invert onto a plate, and serve.
