Grilled vegetables & chicken
The world's simplest yet delicious meal - Grilled vegetables and chicken. This simple recipe promises an explosion of flavors and a wonderful and easy dining experience.
- Eggplant
- Bell pepper and/or padrones
- Onion
- Amadine potatoes
- Chicken fillet
- Spice mix
- Lime
- Olive oil
- Greek yogurt
- Mint
- Garlic
- Set the oven to 250° (convection oven).
- Mix yogurt with grated garlic and chopped mint. Season with salt to taste.
- Halve the vegetables and potatoes and place them in a bowl along with the chicken and a generous splash of olive oil. Season with your desired spice blend, salt, and the juice of one lime.
- Spread the mixture on a OneTray and grill in the oven for 10 minutes.
- Take it out of the oven and let it rest for about 3 minutes.
- Serve the grilled vegetables and chicken together with the refreshing mint yogurt.
