BBQ Chicken Quesadillas
In the mood for a quick and delicious meal? These BBQ Chicken Quesadillas are packed with smoky, juicy chicken, melted cheese, and the perfect crispy tortilla. Ingredients:
• 1-2 chicken breasts
• Salt, pepper, paprika powder
• 3 tbsp BBQ sauce
• Flour tortillas
• 1 red onion, sliced
• 1 garlic clove, minced
• Shredded cheese
Here's how:
1) Heat a large pan over medium heat. Season the chicken with salt, pepper, and paprika powder.
2) Cook the chicken for 15-18 minutes, flipping halfway through.
3) Once the chicken is cooked, remove it from the pan and shred it.
4) In the same pan, add the onion and garlic, cooking until the onion softens. If needed, add a bit of tomato paste, paprika powder, and water for extra flavor.
5) Return the shredded chicken to the pan, add the BBQ sauce, and stir to combine. Set aside.
6) In the same pan, place a tortilla and sprinkle cheddar cheese on one half.
7) Add the BBQ chicken mixture on top of the cheese, then sprinkle more cheese over the chicken.
8) Fold the tortilla in half and cook for 6 minutes, flipping halfway until golden brown and crispy.
9) Serve with extra BBQ sauce and garnish with fresh parsley. Enjoy your quick and delicious BBQ Chicken Quesadillas!
