Master the art of searing meat with these expert tips

1) Place your pan over high heat. For cuts with a fat cap, lay the meat in the pan from the beginning, adding a pinch of salt to the cap. As the fat melts and turns golden (if a cap is present), you can flip the meat and start searing the other side. If there's no fat cap, introduce beef suet or cooking oil.

2) Sear all sides until they achieve a golden hue. Once the meat is beautifully caramelized, reduce the stove temperature to around 70%.

3) Add a generous knob of butter, a couple of crushed garlic cloves, and a sprig of thyme and/or rosemary. Spoon the infused butter over the meat, allowing it to caramelize and reach the desired internal temperature.

4) Before slicing into your masterpiece, allow the meat to rest for at least 5 minutes. This crucial step ensures the juices redistribute throughout the meat, delivering a succulent and flavorful bite.
