- Eggplant
- Bell peppers and/or padron peppers
- Onion
- Almond potatoes
- Chicken fillet
- Spice blend
- Lime
- Olive oil
- Greek yogurt
- Mint
- Garlic
- Set the oven to 250° (convection oven).
- Mix the yogurt with grated garlic and chopped mint. Season with salt.
- Halve the vegetables and potatoes and place them in a bowl together with the chicken and a generous splash of olive oil. Season with your preferred spice blend, salt, and the juice of one lime..
- Spread the mixture on a OneTray and grill in the oven for 10 minutes.
- Remove it from the oven and let it rest for about 3 minutes.
- Serve the grilled vegetables and chicken with the refreshing mint yogurt.
