Caramelized peaches with vanilla ice cream & homemade caramel sauce

Ingredients

For the peaches
4 ripe peaches or nectarines, halved
1.5 dl caster sugar
3 tbsp fresh rosemary, finely chopped
Flaky sea salt
Butter (for frying)

For the caramel sauce
3 dl whipped cream
1.5 dl granulated sugar
50 g butter
0.5 dl light syrup
1 vanilla pod (or 1 tsp vanilla extract)
Flaky sea salt

For serving
Vanilla ice cream

Here's how you do it

  1. Preheat the oven to 200°C.

  2. Mix the brown sugar, chopped rosemary, and a pinch of flaky salt.

  3. Press the sugar mixture onto the cut sides of the peach halves.

  4. In your OnePan 28 cm frying pan, melt the butter and fry the peaches cut-side down for 5 minutes, until golden.

  5. Place the same pan directly in the oven and roast for 10 minutes. Turn the peaches over and roast for another minute.

  6. In your ONEPan 26 cm sauté pan , mix all the ingredients for the caramel sauce. Bring to a boil, then simmer for 15 minutes. Allow to cool slightly.

  7. Serve the warm peaches with scoops of vanilla ice cream and a generous drizzle of caramel sauce.
